How We Cater a 200 Person Corporate Holiday Event in Downtown San Diego
Corporate holiday catering gets a little more complicated when you’re feeding 200 employees in a downtown San Diego high-rise while the business continues operating.
For one of the corporate holiday events we’ve catered in San Diego, the goal wasn’t simply to serve everyone a holiday lunch. The company wanted to create an elevated experience for its employees while accommodating staggered lunch breaks, multiple serving areas and executives visiting from out of town.
That meant building a catering plan around both the food and the logistics of the workplace.

Catering 200 Employees Without Interrupting the Workday
This downtown San Diego event takes place inside a corporate call center located on the eighth floor of a high-rise building.
Approximately 200 employees need to be served, but they can’t all leave their positions simultaneously.
Instead, employees are released for lunch in staggered groups of approximately 60–70 people at a time between 10 a.m. and 2 p.m.
From a catering perspective, that changes everything.
Rather than setting out one buffet for 200 people and allowing everyone to eat at once, our team has to treat each wave almost like the beginning of a new event.
After one group finishes, we replenish the food, clean and reorganize the stations, replace anything that needs attention and make sure the presentation is ready for the next group.
Our goal is simple: the employees arriving at 1 p.m. should see a buffet that looks just as fresh and inviting as the employees who arrived at 10 a.m.
Two Catering Stations in Separate Areas of the Building
Because of the size and layout of the workplace, the catering setup is divided between two separate areas of the building.
This helps distribute employees more efficiently and prevents one serving area from becoming overcrowded when a new lunch group is released.
It also means our team has to monitor two stations simultaneously.
Food quantities, serving utensils, disposable dinnerware, cleanliness and presentation all need to be checked continuously. As one station begins running low on an entrée or side dish, replacement pans have to be ready before the next group arrives.
For large corporate catering events, these behind-the-scenes logistics can be just as important as selecting the menu.
Building This Year’s Holiday Menu
The company had already established a tradition its employees enjoyed.
At the previous holiday event, they featured a large charcuterie display and an extensive dessert station. Both were popular enough that they wanted to bring them back—while making the overall experience even bigger this year.
The charcuterie spread will remain a centerpiece, and the dessert presentation will be expanded.

Why Replenishment Matters for a Four-Hour Corporate Lunch
Serving food from 10 a.m. until 2 p.m. requires a different strategy than serving everyone at noon.
We don’t want to put four hours’ worth of food on the buffet at 10 a.m. and simply leave it there.
Instead, our team plans around the different waves of employees.
Fresh pans can be brought out as needed, serving areas can be cleaned between groups, and charcuterie and dessert displays can be reorganized and replenished throughout the event.
That helps us maintain both food quality and presentation.
When the next 60 or 70 employees arrive, the station shouldn’t look like hundreds of people have already been through it.
Catering Inside a Downtown San Diego High-Rise
Corporate catering in downtown San Diego also presents logistical considerations that aren’t always obvious when planning the menu.
This event is on the eighth floor of a high-rise building, so loading in isn’t as simple as parking next to a ballroom door and carrying everything inside.
Food, equipment, serving pieces, supplies and dinnerware need to travel from our vehicles into the building and up to the event floor.
That makes preparation especially important.
We organize our equipment and use carts so the team can efficiently move everything needed for the event while minimizing unnecessary trips during load-in and load-out.
When catering inside office towers and other downtown San Diego buildings, we plan additional time for these logistics rather than allowing them to interfere with the scheduled meal service.
Creating a More Elevated Corporate Experience
The company also wanted this year’s event to feel more elevated because executives will be coming into town for meetings.
Instead of basic paper plates and lightweight plastic utensils, they’re using higher-end disposable plates, forks and knives.
It’s a relatively small upgrade, but presentation matters.
Employees get a holiday meal that feels more special than an ordinary catered office lunch, while the company still gets the convenience and efficiency of disposable dinnerware.
When combined with the charcuterie display, expanded dessert station and traditional hot holiday menu, the result is a much more polished corporate holiday experience.
